煎饺 (pan-fried jiaozi) are the seared version of China's famous dumplings: first cooked covered with a little water, then left to sizzle until the base turns crisp. This double cooking — steam and fry — gives the contrast of textures that makes them irresistible. Garlic chives (jiucai) are one of the most traditional and beloved fillings.

Yes: our dumplings are closed by hand in our kitchens. The wheat-ear pleat you can see on the steamed ones can only be made by hand, one fold at a time.

It is the cooking method, and it changes everything. Steamed (蒸饺): the wrapper stays thin and translucent, with no oil. Boiled (水饺): the wrapper is thicker and softer. Pan-fried (煎饺): the dumplings are steamed first and then seared, so the base turns crisp while the top stays juicy.
