How to tell them apart

"Chinese dumpling" covers several quite different things in English. In Chinese they have separate names, and at the counter you can tell them apart at a glance.

饺子 jiǎozi — the dumpling

A rolled wrapper pleated shut around the filling, in a half-moon. This is what we mean by dumpling: 10 varieties, boiled, steamed or pan-fried. The name changes with the cooking, not with the filling.

包子 bāozi — the steamed bun

Leavened dough, not a thin wrapper: steamed, and soft like bread. Bigger than a dumpling, with proportionally less filling. If you were looking for the soft white bun, this is it.

馄饨 húntun — wonton in broth

A much thinner wrapper than a dumpling, a small filling, almost always served in its broth. You eat it with a spoon: it is a soup dish, not something to dip.

Which cooking to choose

Steamed if you want to taste the filling through a thin wrapper, with no oil. Boiled if you want them soft and substantial, for dipping in soy sauce. Pan-fried for contrast: crisp base, soft on top.

Yes: our dumplings are closed by hand in our kitchens. The wheat-ear pleat you can see on the steamed ones can only be made by hand, one fold at a time.

What is the difference between steamed, boiled and pan-fried dumplings?

It is the cooking method, and it changes everything. Steamed (蒸饺): the wrapper stays thin and translucent, with no oil. Boiled (水饺): the wrapper is thicker and softer. Pan-fried (煎饺): the dumplings are steamed first and then seared, so the base turns crisp while the top stays juicy.

Do you have vegetarian dumplings?

Yes, 2 varieties: vegetarian dumplings with egg and the mixed-vegetable ones, both €5.00.

How much do they cost?
